Mendiants

Wafer-thin dark chocolate disks studded with nuts and dried fruit, Mendiants are traditionally crafted in France during the Christmas season. Elegant & artistically arranged, they are perfect as an ending to a decadent meal or festively packaged as a delicious gift.


INGREDIENTS
7 ounces 85% dark chocolate, finely chopped
½ tablespoon coconut oil
½ cup dried apricots, quartered
¼ cup blanched almonds
1 tablespoon orange rind, thinly sliced
⅛ teaspoon sea salt

Line a rimmed baking sheet with parchment.

Over medium heat, warm a large saucepan.

Add water and simmer.

Fit a small glass bowl inside saucepan, creating a double boiler.

Decrease heat, ensuring water does not splash into the bowl.

Add chocolate and coconut oil, stirring occasionally, until melted and combined.

Combine and organize apricots, almonds, and orange rind in 25 equal parts.

Using a ½ tablespoon, drop spoonfuls of  melted chocolate on prepared sheet.

Top each chocolate round with one-part of the fruit and nut mixture.

Freeze for 10 minutes, until set.

Remove from freezer.

Serve or store refrigerated.
