Buns serve a purpose. They envelope a sandwich, add texture & flavor, and give us something to hold on to. Be honest, no one really enjoys wrapping a warm, slippery burger in lettuce. Of all points, the key is flavor, as a great bun can add an entire level, whether savory or sweet, nutty or salty. If cheese scones are your idea of savory bliss, this bun is for you. With a cauliflower base, it’s for your blood sugar as well.
Please note you will need a food processor for this recipe.
Preheat oven to 425 degrees F.
Line a rimmed baking sheet with parchment.
In a medium bowl, add cauliflower.
Microwave on high for several minutes.
Drain cauliflower in a fine-mesh strainer, pressing, until almost dry.
Return cauliflower to medium bowl.
Add feta, egg, salt and pepper, stirring, until well-combined.
Using a 1/4-cup measure, scoop cauliflower mixture onto prepared baking sheet in eight parts.
Pat each into a 4-inch round.
Bake for 15 minutes.
Sprinkle with sesame seeds.
Bake for an additional 5 minutes, until golden.
Serve or store refrigerated.
