Breakfast sets the tone for the day and some days call for a heavier carb load than others. For those active mornings, this is my go-to recipe. Delicious, textured, and slightly sweet, Bircher Muesli is a cold porridge dotted with apples, walnuts and seeds and mixed with protein-rich Greek yogurt. This simple cereal has a healthy protein to carbohydrate ratio, while the rolled oats have a low GI footprint, warding off a blood sugar spike.
Please note you will need a processor for this recipe.
Using a processor, add apple and walnuts, pulsing, until finely chopped.
Transfer to a medium bowl, add soy milk, oats, yogurt, flaxseeds, hemp seeds, chia seeds and cinnamon, stirring, until combined.
Cover and refrigerate one hour.
Stir before serving with berries.
