Here’s one straight from my cookbook.
Apple adds an unexpected twist to the classic turkey burger. Moist, textured and full of flavor, they’re best topped with your favorite fixings and sandwiched between either flax seed or cheesy cauliflower buns for an elevated, somewhat autumnal, version of burger night.
Over medium heat, warm a small, nonstick skillet.
Add one tablespoon olive oil, celery, scallions and garlic, sautéing, until tender.
In a large bowl, add turkey, apple, chives, thyme, remaining salt and pepper, stirring, until well-combined.
Add celery mixture, stirring, until well-combined.
Using a 1/3 cup, divide turkey mixture into six parts.
Flatten and shape into patties.
Set aside.
Over medium heat, warm a large, nonstick skillet.
Add remaining olive oil to heated pan, swirling to thinly coat bottom.
Add turkey patties to pan, sautéing, until browned and internal temperature reaches 165 degrees.
Serve immediately.
