Masala Chai has an interesting history seemingly rooted, not in ancient India, but in colonial history. Backstory aside, this fragrant, spiced tea soothes the soul one warm cup at a time. Every recipe is different, here’s ours with heavy cardamom & spicy ginger, promising to stoke your inner fire when the weather turns nippy.
Using a mortar & pestle, crush cardamom, cloves & peppercorns into large pieces. *
Add crushed spices to a large saucepan.
Toast spices over medium heat until fragrant, about two minutes.
Add milk, cinnamon, ginger, star anise and tea leaves to saucepan.
Cover and simmer on low for 15 minutes, do not boil.
Remove from heat, strain & serve.
