Heat olive oil in a large skillet over medium heat.
Add ground chicken, onion, ginger and garlic, sautéing until golden brown.
In a small bowl, whisk hoisin, soy sauce and rice vinegar, until well blended.
Add hoisin mixture and water chestnuts to browned chicken, stirring to combine.
Serve in lettuce cups, topped with scallions.
